INGREDIENTS
2 tbsp ground coriander
2 tbsp ground cumin
1 1/2 tbsp ground turmeric
2 tsp ground ginger
1 tsp mustard powder
1/2 tsp ground black pepper
1 tsp ground cinnamon
1/2 tsp ground cardamom
1/2 tsp Kashmiri chilli
12 eggs, boiled
2 tbsp mayonnaise
1 tbsp above spice blend
Three Threes Pickled Onions and Gherkins
METHOD:
Make spice blend and set aside in jar.
Remove yolks from whites and in a small food processor blend with the rest of the ingredients to a smooth paste, season. Place in piping bag with a star tip.
Pipe into whites.
Serve with pickles
