INGREDIENTS (TANDOORI BARRAMUNDI)
  • 1 Humpty Doo Barramundi

  • 2 tbsp yogurt

  • 1 tbsp oil

  • 1 tsp crushed ginger

  • 1 tsp garlic, crushed

  • 1 lime, juiced

  • Pinch salt

  • 1⁄2 tsp turmeric

  • 1 tsp garam masala

  • 1⁄2 tsp ground coriander

  • 1⁄2 tsp ground cumin

  • 1tsp Kashmiri red chilli powder

  • 1 tsp Kasoori methi

  • 1 tsp Kasoori Methi

INGREDIENTS (SLAW)
  • 1/4 cup mayonnaise

  • Juice of 1 lime

  • 2 tbsp freshly chopped coriander

  • 1 tbsp honey

  • 2 cup shredded cabbage

  • 1 cup corn kernels

  • 1 jalapeño, minced

  • 2 tbsp mayonnaise

  • 2 tbsp yoghurt

METHOD:
  • Place all marinade ingredients in a bowl add fish. Sear in pan or on bbq or in the oven until golden.

  • Toss together all ingredients for slaw.

  • Serve fish over grilled tortillas with corn slaw and avocado. Squeeze lime juice on top and garnish with mayonnaise yoghurt dressing.
