INGREDIENTS (TANDOORI BARRAMUNDI)
1 Humpty Doo Barramundi
2 tbsp yogurt
1 tbsp oil
1 tsp crushed ginger
1 tsp garlic, crushed
1 lime, juiced
Pinch salt
1⁄2 tsp turmeric
1 tsp garam masala
1⁄2 tsp ground coriander
1⁄2 tsp ground cumin
1tsp Kashmiri red chilli powder
1 tsp Kasoori methi
1 tsp Kasoori Methi
INGREDIENTS (SLAW)
1/4 cup mayonnaise
Juice of 1 lime
2 tbsp freshly chopped coriander
1 tbsp honey
2 cup shredded cabbage
1 cup corn kernels
1 jalapeño, minced
2 tbsp mayonnaise
2 tbsp yoghurt
METHOD:
Place all marinade ingredients in a bowl add fish. Sear in pan or on bbq or in the oven until golden.
Toss together all ingredients for slaw.
Serve fish over grilled tortillas with corn slaw and avocado. Squeeze lime juice on top and garnish with mayonnaise yoghurt dressing.
