INGREDIENTS
1 Our Cow Pork Belly approx 2.5kg
1 bunch of rosemary
1 bunch of sage
1 bunch of thyme
50g fennel seeds
Salt and Pepper
METHOD:
Roughly chop all the herbs
Lay down the Our Cow Pork Belly and pat it down from excess moisture
Sprinkle over salt, pepper, fennel seeds and the herbs
Roll and tie it up with some butchers twine
Bake it for 3hrs at 160 degrees in the oven
For the last 10 minutes put it at 250 degrees to get the crackling
Once out of the oven let it rest for at least 10-15 minutes, then cut into thick slices and eat, Buon Appetito.
