INGREDIENTS
  • 1 Our Cow Pork Belly approx 2.5kg

  • 1 bunch of rosemary

  • 1 bunch of sage

  • 1 bunch of thyme

  • 50g fennel seeds

  • Salt and Pepper

METHOD:
  • Roughly chop all the herbs

  • Lay down the Our Cow Pork Belly and pat it down from excess moisture

  • Sprinkle over salt, pepper, fennel seeds and the herbs

  • Roll and tie it up with some butchers twine

  • Bake it for 3hrs at 160 degrees in the oven

  • For the last 10 minutes put it at 250 degrees to get the crackling

  • Once out of the oven let it rest for at least 10-15 minutes, then cut into thick slices and eat, Buon Appetito.
